Trying something new

Okay, so obviously my blogging has been in a bit of a rut lately.  So I think just to keep those creative juices flowing I'll post a few recipes that I'd like to share.  Here's my first, and also one of my favorite recipes.  It's my go to recipe when I don't have much food left in the house (except food storage) and I have to have dinner on the table pronto.  I've fixed it so much my kids are getting tired of it, but I still LOVE it.  Of course I got it from Our Best Bites and then I've modified it a bit to suit my laziness and lack of ingredients:

Thai Peanut Noodles
1/2 c. chicken broth (I use water and chicken boullion)

3 Tbsp. creamy peanut butter

1 1/2 Tbsp. honey

3 Tbsp. soy sauce

1 1/2 Tbsp. fresh minced ginger (I use 1 heaping tsp. of dried ginger)

2-3 cloves garlic, pressed or minced (I sometimes use about 1 tsp. of garlic powder)

8 oz. Udon or linguine noodles (I just usually use spaghetti noodles, just not angel hair, it would be a clumpy mess!)

Toppings
Chopped green onions

Chopped cilantro

2 limes, cut into quarters

Chopped peanuts

Sriracha sauce (spicy Asian condiment)

In a pot on the stove take all the ingredients (minus the toppings) and cook until heated through.  At the same time boil the water for your noodles.  When the water is ready, cook the noodles until they are al dente, and then strain.  Then add the warmed peanut sauce onto the strained noodles.  Now all you have to do is put the toppings on.  I usually just make up separate little bowls for the toppings and then everyone can put what they want on top of their noodles.  I also have to say that I usually double the recipe for the sauce to put it on a whole box of spaghetti.  We had this the other night with cubed watermelon and it was fantastic!!

Jen I think this is similar to "Pad Thai" which I LOVE! You'll have to make it for me next time your down. I'm sure you know this but I love Sriracha! Delicious, very garlicky and spicy!
