The last week and half has been a bit of torture here at our house. Kate is finally getting her teeth. But I am discovering that she obviously does not have a high pain tolerance because she has been miserable. She has cut three teeth in the last month and is working on a top one (and possibly a few more?). This has led to quite a lot of sleep deprivation on my part and on hers. Last Wednesday night she also came down with a fever, and was even more miserable until early Saturday morning when the fever finally went down. (Hallelujah!) I thought it was the flu and the doctor even thought it could have been the flu, but she never had any other symptoms? So who knows?
In other probably uninteresting news I have begun baking on Sunday afternoons with the kids. I have found a few new websites that specialize in recipes for baked goodies. It's my food porn addiction. One of my favorites is on the sidebar, One Ordinary Day and My Baking Addiction. Both have beautiful drool-worthy pictures of their baking experiments. Today Abe and I went looking for something good to make and came up with this recipe for "Magic Bars" inspired by the post on My Baking Addiction, even though the recipe we used is from Allrecipes. Anyways it turned out decadently good. A little too rich for even my blood, but one piece will really satisfy your sweet tooth. More than that and you won't be able to finish it. I halved the recipe (to reduce the risk of hip,thigh, AND butt swelling induced by consuming massive amounts of sugar) and had Abe make it in a 9 x 9 square pan. And yes, I said Abe made it. He's becoming quite the chef. (I did supervise!) So here it is:
Magic Cookie Bars

1 1/2 cups graham cracker crumbs
1/2 cup margarine, melted
1 cup chopped walnuts
3/4 cup semisweet chocolate chips
3/4 cup butterscotch chips
1 1/2 cups flaked coconut
1 1/3 cups sweetened condensed milk
Preheat oven to 350 degrees F (175 degrees C).
In a 9 x 13 inch pan pour in melted margarine. Sprinkle the graham cracker crumbs evenly over the margarine. Next place the chopped nuts over the crumbs, and spread the chocolate and butterscotch chips over the nuts. Add the coconut over all, and pour the milk evenly over the top.
Bake 25 to 30 minutes or until lightly brown on top. Cool at least 20 minutes then cut into desired sized bars. (Don't try cutting it any earlier unless you want an ooey gooey mess!)
I've also seen recipes that omit the butterscotch chips so I just used whatever I had on hand which was more like 1/3 cup and replaced the rest with chocolate chips. It was pretty good!
